About this host
The Alpilles is a limestone range that punches out of the Provençal plain like a white spine. Domaine des Baux sits at the foot of it, among olive groves that have been tended since Roman times — there are press stones in the field that archaeologists have dated to the first century. The harvest here runs November into December, cool and often misty in the mornings, warm and bright by noon. Groups pick Salonenque and Aglandau olives by hand and with small electric rakes, carrying crates to the estate's own mill at the end of each afternoon.
The story behind this place
The Bonnard family has owned the domain for four generations. Thierry, the current farmer, studied agronomy in Montpellier before returning to take over from his father. He is methodical and quietly proud of the estate's AOC certification — he will explain what that means in detail if you ask, and at great length if you seem interested.
